When the conversation is about the olive tree, Greek land certainly has a lot to say. Our Unsalted Green Olives come from Agrinio and when we got them we feared they are so big that we will have trouble drying them up! They are processed only in warm air (without any additives and without brine), and you have not tasted anything like it unless you have had olives in your village and used to eat Hamades. For those who do not know, the Hamades are olives that have dried on the tree and have “fall down”, hence the name. (the ones that fall down)!
For all those who do not want or cannot consume salt, they just found their new favorite variety. It is worth mentioning that the usual olive degeneration process removes many of its natural phenols, which are known for their antioxidant properties. The main advantage of our olives is that, as they have not been soaked in brine, they have retained its original organoleptic components, such as calcium and phosphorus, as well as the initial levels of eleuropaine of the fruit.
This results in a sparkling olive, which can be enjoyed without extra salt.
